The concept

Two Big Apples.
One idea.

New York has always called itself “The Big Apple”. Scandinavia has always been a fruit garden. The cocktail “Scandinavian Apples” sits between those two identities: a reimagining of a classic New York sour, built entirely without alcohol.

We did not start with a cocktail and remove the alcohol. We started with the cities SAS connects.
The insight

The shared thread is rye

We looked for what Scandinavia and New York actually have in common. It was not apples. It was rye.

America knows rye as whiskey being the second largest producer in the world. Denmark knows it as rugbrød being the top-ranked baking scene. Same grain, two cultures, one flavour memory, and the “glue” of the entire drink. Every ingredient has a reason.

The liant

Rye bread &
cardamom syrup

Danish rugbrød is toasted dark, then steeped with cardamom and cooked down into a syrup. It gives the drink the grainy, bready depth a whiskey would normally carry, plus a Nordic bakery note on top.

The alcohol-free base, made in Copenhagen. Our starting point and our signature.

Danish cloudy apple juice

The freshness of the New York orchard, carried by a Scandinavian organic apple.

Rye bread & cardamom syrup

Sits where the whiskey would in a New York sour. Same grainy depth, fully Scandinavian.

Sea buckthorn (havtorn)

Replaces lime or lemon. The same sharp lift, one hundred percent Nordic, and in season now.

Water

Opens the batch up and sets the strength of the pour.

Vitamin C (ascorbic acid)

Guards colour and flavour against oxidation over days in transit.

Sustainability

Zero waste, by design

Sustainability shaped the recipe rather than decorating it. The rye mash left over from the syrup is dried and milled into a fine rye and cardamom dust, then used to coat the dehydrated apple slices. Every part of the bread works twice: first as flavour, then as finish.
