However, in a competitive market, NYU sought to diversify its offerings to attract a broader audience and increase revenue. They turned to Centric Hospitality for a solution that would stay true to their identity while introducing an innovative new revenue stream.
NYU needed to integrate cocktails into its menu without compromising its core identity as a wine bar. The challenge was to create a seamless blend of wine culture and mixology that:

To enhance the bar’s experience, we crafted a distinctive pre-batched cocktail menu, that blends wine and unconventional ingredients, and offers an easy to deliver cocktail experience. By keeping the flavours, colors and style true to NYU’s concept, our approach not only pleases the senses but also creates a cohesive visual identity.
Recognizing the power of immersive experiences, we organized a dynamic bar takeover and menu launch event, supported by industry professionals attending that underscored NYU’s bold, innovative move in the beverage space.
Beyond the drinks themselves, we invested in the team, delivering comprehensive training to NYU’s staff on cocktail craftsmanship, compelling storytelling, and savvy upselling techniques – ensuring every interaction was memorable.
To bring the concept to life visually, we collaborated with Midnight Media DK, producing striking media packages that captured the cocktails’ artistry and the venue’s vibrant ambiance.
PRE-BATCHED COCKTAIL MENU DEVELOPMENT
Recognizing the need to attract and retain a broader audience, we meticulously crafted a cocktail program that complemented the existing wine offerings.
A key feature was the introduction of a low-ABV wine-based cocktail, designed to bridge the gap between traditional wine and cocktail preferences, offering a lighter, more approachable option.
Additionally, we ventured into more adventurous territory, incorporating unconventional bases such as Calvados, an apple brandy, and house-made distillates, showcasing a commitment to innovation and unique flavor profiles.
The visual aspect was also carefully considered; the cocktail colors were thoughtfully selected to mirror and harmonize with the diverse hues found in wine, ensuring a seamless aesthetic integration with the bar’s existing ambiance.
